Baked Pierogi with Bacon & Green Onion

Pierogi are traditional Polish dumplings that are usually filled with potato.  My gem of a neighbor, Violet, was kind enough to bring a dish of baked pierogi over to my home a couple weeks ago. This is the most deliciously comforting meal and Vi was sweet enough to share the recipe with me! Warning, this recipe will have you wanting to lick the bowl (..and why not? Enjoy yourself!)

Baked Pierogi with Bacon & Green Onion

1 Box of Frozen Potato & Cheese Pierogies
5 Slices of Bacon –chopped into smaller bits
4 Ounces Cream Cheese
¼ Cup Sliced Green Onion
2 Cloves of Garlic; minced
½ Teaspoon Fresh Ground Pepper
2/3 Cup of Chicken Broth
¾ Cup Sharp Cheddar; shredded


Preheat your oven to 400°

Grease an 11x7 glass dish with nonstick cooking spray

Place the entire box of pierogies in the glass dish

Cook bacon until crispy – over medium heat – and then remove from pan and place off to the side

Lower heat to medium-low and mix the garlic into the bacon drippings, stirring for approximately 1minute with a whisk

Add the cream cheese to the garlic and drippings and allow to melt, but continue to stir

Slowly add the chicken broth and whisk together until the mixture becomes smooth

Pour mixture over pierogies as evenly as possible

Sprinkle cheddar over pierogies and bake for 18-20 minutes

Remove dish from oven and immediately sprinkle pepper, green onions, and bacon over pierogies
