Friday PieDay - Greek Style!

Yes, I’m aware that it is only Thursday ~ but if I post this most delightful pizza recipe today, you have plenty of time to acquire the ingredients to make this dish on its most popular day.  As far as I am aware, pizza on Fridays became popular due to religious dietary restrictions (no meat on Fridays).  I believe it remains such a Friday staple because it is a fabulous way to end a long work week.  A scrumptious slice of pizza is most rewarding on a Friday evening with a big glass of red wine ~ and this recipe is perfect for just that situation….       [ "Read More"]

Greek Pizza on Indian Flatbread

1 Package Naan Flat Bread (I find mine at Costco, any flatbread of your choice is fine though)
1 Bag Fresh Baby Spinach
2 Large Green Peppers
1 Large Red Onion
Extra Virgin Olive Oil
Feta Cheese
Shredded Mozzarella
Kalamata Olives
(Ingredients set for two individual pizzas…. No amount specified for cheese and olives – add according to preference :] )

Heat olive oil in pan

Add onions and peppers and sauté until they just being to soften

Begin adding spinach in handfuls, mixing it into the onions and peppers…  as the leaves soften add more until the entire package is used  (add quick pours of olive oil as needed to keep from drying out)

Once spinach is softened, but still bright green, remove from heat.

Preheat oven to 375°

Place two slices of Naan on a baking sheet

Lightly brush each side with olive oil

Scoop spinach mixture onto Naan – splitting equally between the two pieces

Crumble feta cheese over each piece

Sprinkle shredded mozzarella over feta

Top with sliced kalamata olives and a dash of oregano on each

Bake until cheese is melted  [anywhere from 5-10 minutes]
