Introducing Moo Bear

It's absolutely necessary that I introduce you to Moo Bear ... the 3 year old English Bulldog with one heck of an attitude and sense of entitlement.  Technically, her name is Madison or Maddie.... she has chosen to respond to neither of those names.  Instead she prefers:  Moo, Moobear, Mooey, Wiggles, Wiggy, Wrinkles, Stinky McWiggles, Pickles, or Madeline Dandiloon.  It takes another pet owner to understand the strange array of nicknames we wind up giving our animals - none of them make sense nor are they remotely close to the original name.

Moo bear is a peach - except for when she's being a beast.  She's always hungry - the phrase "eat whatever isn't nailed down" does not apply to her... she is perfectly content with parking herself in front of said nailed down object and chewing it in its stationary location.  Taste is also of no importance, as we've learned from the numerous bricks and tree branches she's hauled onto the couch from the back yard.

Here's a little video footage of her demanding a piece of my toast.  I'm almost certain she'll master the sheep noise by the end of the week.  A dog with many talents, she is!

Mini Apple Pies Perfect With Snow

We're definitely experiencing some bipolar weather here in New York!!  First the hurricane... then a nor'easter with way more snow than anyone believed would fall... and now a beautiful weekend ahead!

I can't speak for everyone, but when I hear snow in the forecast I immediately go into "what comfort foods can I cook? mode."  I've been itching to use my mini pie maker, so apple pie was the way to go.  So simple, so yummy - and if you don't have a mini pie maker then a muffin tray works just as well.

Pre-made Pie Crust
2 to 3 Apples
1/4 Cup of Sugar
1/4 Cup Brown Sugar
1 tsp Cinnamon
1 tsp Vanilla Extract
Pinch of Salt
1 tbs Flour

Cut your pie crust to the appropriate size (my pie maker came with a circular cutter, but a bowl works just as well - make sure you're cutting circles that are slightly larger than the size of your muffin cup), peel and dice apples, mix the dry ingredients and vanilla in a bowl and toss with apples.

Fill your pie crust and cover with either a second crust or a decorative top (I gave a lattice design my best effort.... it's a work in progress) ~ also,  before I placed on the top pie crust I placed a few thin shavings of butter on the seasoned apples.

If you're using muffin tins in the oven then bake at 375 degrees for 35-40 minutes depending on your oven.

I had some left over seasoned diced apples after I filled and baked my pies... so in the spirit of not being wasteful I simply topped the warm pies with extra apple!  In was indeed a fabulous decision.

There isn't much to do in my neck of the woods right now.... With the hurricane causing a gas shortage throughout the island and people waiting upwards up 2 hours to fill their tanks (or get their max $30 worth in some locations) I'm in no position to go driving around.  When things settle I'll take to the streets to jump start my Christmas shopping.  (I've vowed to myself to get as much done as early as possible to ease the financial burden)

So I've been pinning like a mad woman, as I'm sure so many others are - whom actually have electricity still....   I now have an arsenal of Thanksgiving and Christmas decor ideas.

Belated Halloween Greetings

My Halloween candle corner doubling as a small heat source since Sandy has robbed me of electricity. There's no right to complain though, since our house has sustained no damage and the trees on our property have remained standing.  I'm sure you've all seen the pictures in the news... it's a devastating scene through out the Tri-State area.

A couple candles and snuggling beneath blankets with the dogs is helping at night when it gets chilly. 

Only a handful of trick-or-treaters has left us with a surplus of sweets!!  Who am I to argue with Mother Nature?  She says eat candy - so we shall eat candy!

Thoughts and prayers now and in the coming weeks for all those who have been tragically effected by this storm... 

Hurricane Sandy Takes to Long Island

Sure is pretty now ~ but those beautiful fall colors will be ripped from their limbs and strewn about the neighborhood in a matter of minutes.   It's getting increasingly dangerous out here on Long Island ~ fortunately I'm far enough from the coast line that I'm not in immediate danger.

I've cooked a pound a bacon, all ready for BLTs and spinach salad (hard boiled eggs too).  Loaded up on fruit, veggies, Ranch dressing, PBJ... and right now (since I still have power) I've microwaved some Cup Noodles and poured myself a glass of Chardonnay.  Classy broad, what can I say?  Hurricane survival has caused all of my healthy eating habits to go straight out the window!

I am currently hosting an impromptu Ladybug Rescue Center, also.  Anything to help!
